Tuna melt recipe
This is a fancier version of a cheese toasty with a bit more protein when energy levels need a boost.

- 200g can tuna in spring water, drained
- 2 tablespoons mayonnaise
- 6 slices of sourdough or wholemeal bread
- 1 large tomato, sliced
- 60g cheese, eg Cheddar or mozzarella or a mixture, grated

Preheat the oven to 200°C/gas mark 6.

Mix the tuna and mayonnaise together in a bowl. Lightly toast the bread then top 3 slices with the tuna mix, a slice or two of tomato followed by the grated cheese.

Top the sandwiches with the remaining lightly toasted slices of bread. Place on a non-stick baking tray and bake for 8-10 minutes or until the cheese has melted.
