Smoked salmon finger sandwich recipe
A favourite among children and great for picnics or party food. Your little ones can help spread the cream cheese and assemble the sandwiches.

- 1 packet soft cream cheese
- 8 slices wholegrain bread
- 100g smoked salmon
- 16 thin slices cucumber
- Juice of 1/4 lemon

Spread a thin layer of cream cheese on 4 slices of the bread. Then top each slice with a quarter of the smoked salmon and 4 cucumber slices.

Squeeze on the lemon juice then top with remaining bread and cut the crusts off. Cut the sandwiches into fingers or triangles and serve straight away.
