Prawns with pesto recipe
Really quick and easy weekday supper if the pesto is already made ahead and in the fridge (or store bought). Serve tossed with pasta or on top of brown rice with a vegetable on the side

- 2 tablespoons olive oil
- 300g peeled prawns
- 75g Pesto (Little Dish recipe) or one pot shop-bought Brown rice or pasta and vegetables, to serve

Heat the olive oil in a medium non-stick frying pan. When the oil is hot, add the prawns and cook for 2-3 minutes on each side or until piping hot.

Remove from the heat and stir in the pesto. Serve with brown rice or pasta and vegetables.
