Mac & Cheese
Mac & Cheese is a favourite among little ones so we have worked hard to provide a tasty and well balanced version. We make our Mac & Cheese with butternut squash and sweet potato in a cheesy sauce, served with macaroni pasta.

For the cheesy sauce:
- 300 ml whole milk
- 300g butternut squash
- 1 sweet potato
- 100g cheddar cheese
- 2 tbsp oil
- 2 tbsp butter
- 3 tbsp plain flour
- 1 tsp yeast extract
- 1 garlic clove
- 0.5 tsp paprika
- Pinch of ground white pepper
- 200g macaroni pasta

Preheat the oven to 180 degrees

Next, chop up up the sweet potato and butternut squash to similar sized cubes and spread onto a baking tray. Drizzle with a tbsp of oil and cook for around 20-25 minutes or until the veg becomes soft enough to blend.

Whilst the veg is roasting. Add the butter to a saucepan and melt. Once melted, pour in the flour and mix vigerously until all the flour is combined.

Add milk gradually into the butter and flour mix, whisking each time a small amount is added.

Add in the paprika and ground white pepper and the yeast extract followed by the cheddar. Mix thoroughly.

Once the veg has cooked and has cooled down slightly, blend the sweet potato and butternut squash in a food processor or using a hand blender until smooth. Once smooth, add into the cheesy sauce mix.

Cook the macaroni pasta in boiling water. Once cooked, drain and add into the cheesy sauce.

The Mac & Cheese may be served as is or you could pop into a baking dish and bake with a sprinkle of cheese on top to get a delcious crunchy crust.
